G\u00fcei tray\u00e9mosvos <strong>seis<\/strong> d\u2019ellos.<\/p>\n<h2 style=\"text-align: justify;\"><strong>1. Quesu Cas\u00edn<\/strong><\/h2>\n<p style=\"text-align: justify;\">Esti quesu debe\u2019l nome al conceyu de <strong>Casu<\/strong>, nel valle altu del Nal\u00f3n, anque la so producci\u00f3n abarca tami\u00e9n <strong>Sobrescoyu<\/strong> y <strong>Pilo\u00f1a<\/strong>, conceyos qu\u2019integren la DOP. Ellab\u00f3rase con pasta amasao a partir de lleche crudo de vaca casina, una raza aut\u00f3ctona del monte asturianu. Pi\u00e9nsase que ye \u00fan de los m\u00e1s antigos, pos ta document\u00e1u dende\u2019l sieglu XIII.<\/p>\n<p style=\"text-align: justify;\">Ye un quesu de tastu fuerte y mantecosu. La so particularid\u00e1 reside en que, una vuelta desuerao, am\u00e1sase formando <em>gorollos<\/em> que se dexen reposar unos d\u00edes pa dempu\u00e9s pasalos per una m\u00e1quina de rabilar cuantes veces se queria aumentar el picor y la intensid\u00e1 del sabor. Finalmente, gr\u00e1bense con un <strong>marcu<\/strong> de madera al env\u00eds d\u2019identificar la queser\u00eda.<\/p>\n<p style=\"text-align: justify;\">Cuenta con <strong>cuatro queser\u00edes<\/strong>: Ca Llechi, El Viejo Mundo, Queser\u00eda Reciegos y La Corte (les dos \u00faltimes vistables). Quesu Gamon\u00e9u<\/strong><\/h2>\n<p style=\"text-align: justify;\">Ellaborao nos conceyos de<strong> Cangues d\u2019On\u00eds <\/strong>y <strong>On\u00eds<\/strong>, ye \u00fan de los tr\u00e9s quesos azules que se faen nel entornu de los Picos d\u2019Europa. El so tastu ye asemey\u00e1u daqu\u00e9 al Cabrales, pero\u2019l preciu nun tien res que ver. Ello ye que la so producci\u00f3n ye muncho m\u00e1s peque\u00f1a y artesanal.<\/p>\n<p style=\"text-align: justify;\">Lo que lo fai tan especial ye tanto\u2019l so afum\u00e1u como la so curaci\u00f3n en cueva, ente dos y cinco meses, que consigue una consistencia semidura, con manches de <em>penicilium<\/em> espard\u00edes pela corteya y un sabor penetrante. Ellab\u00f3rase a partir de lleche de vaca, oveya y cabra, si bien nel casu del quesu<strong> Gamon\u00e9u del Puertu<\/strong> han mecese a lo menos dos tipos de lleche (m\u00ednimu un 10% la d\u2019ov\u00edn y\/o capr\u00edn). Quesu de Los Beyos<\/strong><\/h2>\n<p style=\"text-align: justify;\">Con <strong>Indicaci\u00f3n Geogr\u00e1fica Protexida (IPG)<\/strong>, produzse nos conceyos asturianos de <strong>Ponga <\/strong>y<strong> Amieva<\/strong> y nel llion\u00e9s d<strong>\u2018Oseya de Sayambre<\/strong>. El so nome vien del escobiu de Los Beyos.<\/p>\n<p style=\"text-align: justify;\">El quesu de Beyos puede ellaborase con lleche de vaca, cabra y oveya, magar qu\u2019ensin amestar. Ye un quesu cremoso, f\u00e1cil d\u2019esfaraguyar al corte y daqu\u00e9 acedo, m\u00e1s intensu nos d\u2019oveya y de cabra, y m\u00e1s suave nos de vaca.<\/p>\n<p style=\"text-align: justify;\">Existen <strong>tr\u00e9s cert\u00e1menes<\/strong> d\u2019esti quesu:<\/p>\n<ul style=\"text-align: justify;\">\n<li><em>San Xuan de Bele\u00f1o (Ponga):<\/em> Domingu \u00faltimu de mayu.<\/li>\n<li><em>Amieva:<\/em> Primer s\u00e1badu de xunu.<\/li>\n<li><em>Oseya de Sayambre (Lli\u00f3n)<\/em>: Ochobre.<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><img data-recalc-dims=\"1\" decoding=\"async\" class=\"size-medium aligncenter\" src=\"https:\/\/i0.wp.com\/s2.productosdeasturias.com\/480-thickbox_default\/queso-los-beyos-igp-de-cabra-400-g.jpg?resize=671%2C671&ssl=1\" width=\"671\" height=\"671\" \/><\/p>\n<p>\u00a0<\/p>\n<h2 style=\"text-align: justify;\"><strong>4. Quesu Pr\u00eda<\/strong><\/h2>\n<p style=\"text-align: justify;\">Propiu de la parroquia costera de <strong>Pr\u00eda<\/strong>, nel <strong>conceyu de Llanes<\/strong>, esti quesu tien lo singular de ser ellaborao con lleche de vaca y mantega d\u2019oveya. De les sos muches variedaes, la m\u00e1s demandada ye\u2019l famosu <strong><em>\u1e25um\u00e1u de Pr\u00eda<\/em><\/strong>, un quesu afumao con madera de carbayu, tienro, de tastu semidulce y prestosu.<\/p>\n<p style=\"text-align: justify;\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-medium aligncenter\" src=\"https:\/\/i0.wp.com\/s2.productosdeasturias.com\/478-thickbox_default\/queso-de-vaca-y-oveja-ahumado-de-pria-500-g.jpg?resize=671%2C671&ssl=1\" width=\"671\" height=\"671\" \/><\/p>\n<p>\u00a0<\/p>\n<h2 style=\"text-align: justify;\"><strong>5. Quesu pic\u00f3n<\/strong><\/h2>\n<p style=\"text-align: justify;\">Ye \u00fan de los quesos m\u00e1s enigm\u00e1ticos d\u2019Asturies y, a xulgar pola so ellaboraci\u00f3n, de los m\u00e1s antigos. La so producci\u00f3n ye dom\u00e9stica cuasi dafechamente, arrequexada al <strong>monte meridional asturianu<\/strong>, onde tien nomes distintos y variaciones seg\u00fan el conceyu: <em>queisu de fonte, queisu d\u2019odre, queisu de bota<\/em> o <em>queixu de vexiga<\/em> en <strong>Quir\u00f3s, Proaza<\/strong> y<strong> Somiedu<\/strong>,<em> quisu pic\u00f3n<\/em> en <strong><span class=\"st\">\u1e36\u1e37<\/span>ena<\/strong> y <em>quisu d\u2019Urbi\u00e9s<\/em> nel <strong>valle de Tur\u00f3n (Mieres)<\/strong>.<\/p>\n<p style=\"text-align: justify;\">Tr\u00e1tase d\u2019un quesu fecho a base de <em>calostru <\/em>o <em>caliestru<\/em> (lleche de vaques par\u00edes de reci\u00e9n), poco graso, pastoso y cremoso, ideal pa untar. El so sabor nun ye aptu pa tolos gustos, pos ye particularmente intensu y picante, motivu pol qu\u2019en delles cases suelen amestar cantidaes peque\u00f1es d\u2019aguardiente de miel o mantega, p\u2019amatagar l\u2019acidez.<\/p>\n<p style=\"text-align: justify;\">Anque una vuelta cuayada la masa puede desuerase en fardeles de tela, en dellos pueblos siguen faci\u00e9ndolo en pelleyes de corderu o cabritu, onde se dexa formentar al calor del llume de la cocina pa que sude\u2019l sueru. Tr\u00e9s meses m\u00e1s tarde p\u00e1sase a una fonte o tarre\u00f1a onde se remueve a lo llargo d\u2019ocho meses pa que\u2019l mofu de la superficie s\u2019esparda de manera homox\u00e9nea.<\/p>\n<p style=\"text-align: justify;\">Esti quesu en peligru de desaniciu ye enforma dif\u00edcil de mercar, conque lo recomendable ye acudir a les distintes feries:<\/p>\n<ul style=\"text-align: justify;\">\n<li><em>Certame del Quesu d\u2019Urbi\u00e9s (Mieres):<\/em> Segundu domingu de xunu.<\/li>\n<li><em>Certame del Quesu de Bota (Bermiego, Quir\u00f3s):<\/em> Primeros de xunu.<\/li>\n<li><em>Certame del Quesu de Fonte (Proaza):<\/em> Primeros de febreru.<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium\" src=\"https:\/\/img2.rtve.es\/v\/5511670?w=1600&preview=1581624022530.jpg\" width=\"1600\" height=\"895\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium\" src=\"https:\/\/upload.wikimedia.org\/wikipedia\/commons\/3\/3f\/QuesodeFuente.jpg\" width=\"848\" height=\"735\" \/><\/p>\n<p>\u00a0<\/p>\n<h2 style=\"text-align: justify;\"><strong>6. Quesu Afuega\u2019l Pitu<\/strong><\/h2>\n<p style=\"text-align: justify;\">Al empar que\u2019l Cas\u00edn, ye \u00fan de los quesos asturianos m\u00e1s antigos, y de fechu ta documentao como moneda de pagu d\u2019impuestos nel sieglu XVIII. Faise con lleche de vaca carre\u00f1a o frisona en peque\u00f1es caser\u00edes, si bien anta\u00f1o la so producci\u00f3n taba presente en cuasi tolos conceyos ente\u2019l Narcea y el Seya. Otros defenden que se debe al procesu de desuer\u00e1u de la varied\u00e1<em> de pu\u00f1u<\/em>, na que s\u2019afuega\u2019l trapu o fardela pa recudir primero d\u2019engolala.<\/p>\n<p style=\"text-align: justify;\">El quesu Afuega\u2019l Picu pres\u00e9ntase en tr\u00e9s modalidaes, curaos, semicuraos o tienros y hasta cuatro variedaes en funci\u00f3n de la so forma: <strong>Atronc\u00e1u blancu<\/strong>, de forma troncoc\u00f3nica, de color blancu y ensin amasar o <strong>Atronc\u00e1u roxu<\/strong>, de forma troncoc\u00f3nica, con piment\u00f3n (lo que-y da un color encarn\u00e1u) y amasao.
